For a more festive presentation, cake can be iced with sour cream and decorated with orange or lemon zest.<\/p><p>Ingredients:<\/p><p>Round spring pan, 26cm diameter<\/p><p>4 eggs, room temperature<\/p><p>1 cup, dark brown sugar (compressed)<\/p><p>1 cup olive or sunflower oil<\/p><p>5 cups carrots, shredded<\/p><p>8 medjool dates, pitted and chopped<\/p><p>100 grams (1\/2 cup) hazelnuts or walnuts, peeled and roughly chopped<\/p><p>2 cups sifted flour<\/p><p>1 \u00bd tsp baking powder<\/p><p>1 tsp cinnamon<\/p><p>\u00bd tsp baking soda<\/p><p>\u00bd tsp salt<\/p><p>For icing:<\/p><p>2 cups sour cream<\/p><p>2 tbsp powdered sugar<\/p><p>\u00bd tsp vanilla extract<\/p><p>\u00a0<\/p><p>Directions:<\/p><p>Preheat oven to 180<sup>o<\/sup>C\/355<sup>o<\/sup>F. Cover bottom of spring pan with baking paper and coat the sides with oil.<\/p><p>Sift flour, baking powder, cinnamon and salt into bowl. Stir gently.<\/p><p>In bowl of electric mixer, whip eggs and sugar until they are incorporated. Reduce mixer speed and slowly add oil. Add carrot, dates, nuts and mix 1 minute. Stop the mixer and add flour mixture. Mix gently. Pour batter into spring pan and bake 1 hour.<\/p><p>Cool and sprinkle with powdered sugar or cover in icing.<\/p><p>To make icing:<\/p><p>Preheat oven to 150<sup>o<\/sup>C\/300<sup>o<\/sup>F. In bowl, mix sour cream, powdered sugar and vanilla extract and pour over cake. Bake 7 minutes. Refrigerate for 12 hours before serving.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-inner-column elementor-element elementor-element-v5wrawa\" data-id=\"v5wrawa\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-z484c0l elementor-widget elementor-widget-text-editor\" data-id=\"z484c0l\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><img decoding=\"async\" class=\"size-medium wp-image-9805 aligncenter\" src=\"https:\/\/www.leket.org\/wp-content\/uploads\/2018\/06\/Capture-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" \/><\/p><h1 style=\"text-align: center;\"><strong>Carrot Salad<\/strong><\/h1><p style=\"text-align: center;\"><a href=\"http:\/\/saloona.co.il\/orlycohen\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Orly Cohen &#8211; Life &amp; Taste<\/strong><\/a><\/p><p>Ingredients:<\/p><p>\u00bd kilo (slightly over a pound) carrot chopped into matchstick sized pieces<\/p><p>50 grams (\u00bccup) sugared pecans, chopped<\/p><p>100 grams (\u00bd\u00a0 cup) dried cranberries and raisins<\/p><p>\u00bc bunch of cilantro, finely chopped<\/p><p>\u00bc bunch of parsley, finely chopped<\/p><p>Leaves from 3 branches of nana (spearmint) finely chopped<\/p><p>Sauce:<\/p><p>3 tbsp rice vinegar<\/p><p>1 tbsp silan (date honey)<\/p><p>1 tbsp tahini<\/p><p>1 tsp chopped chili peppers (optional)<\/p><p>Salt and pepper<\/p><p>1-2 tbsp water to dilute sauce if necessary<\/p><p>Directions:<\/p><p>Mix all ingredients in bowl. Put all sauce ingredients in bottle or jar and shake well until the mixture comes together. Pour sauce on salad and mix. Refrigerate overnight to allow flavors to mix.
