{"id":7572,"date":"2014-08-30T13:41:53","date_gmt":"2014-08-30T10:41:53","guid":{"rendered":"https:\/\/www.leket.org\/?p=7572"},"modified":"2020-06-23T09:54:53","modified_gmt":"2020-06-23T09:54:53","slug":"shoftim-recipe-poached-salmon-asian-pear-oranges-cilantro-shallot-vinaigrette","status":"publish","type":"post","link":"https:\/\/www.leket.org\/en\/shoftim-recipe-poached-salmon-asian-pear-oranges-cilantro-shallot-vinaigrette\/","title":{"rendered":"Shoftim Recipe &#8211; Poached Salmon with Asian Pear, Oranges, and Cilantro-Shallot Vinaigrette"},"content":{"rendered":"<p><strong>Jessica Fishman Levinson<\/strong><\/p>\n<p>Prep Time: 15 mins<\/p>\n<p>Cook Time:  8 mins<\/p>\n<p>Total Time:  23 mins<\/p>\n<p>Recipe Type: Main<\/p>\n<p>Serves: 4<\/p>\n<p>Ingredients<\/p>\n<p>For Poaching:<\/p>\n<p>1 lemon, thinly sliced<br \/>\nFreshly ground black pepper<br \/>\n4 skinless salmon fillets (1 pound total)<br \/>\nFor Cilantro-Shallot Vinaigrette:<\/p>\n<p>\u00be cup olive oil<br \/>\n\u2154 cup red wine vinegar<br \/>\nHandful chopped cilantro<br \/>\n1 small shallot, minced<br \/>\n\u00bd teaspoon cumin<br \/>\n\u00bc teaspoon coriander<br \/>\nKosher salt and freshly ground pepper, to taste<br \/>\nFor Salad:<\/p>\n<p>Baby spinach or baby spinach-arugula mix<br \/>\n1 naval orange, divided into sections<br \/>\n1 small or \u00bd large Asian pear, thinly sliced in half moons<br \/>\n1 small or \u00bd large red onion, thinly sliced in half moons<br \/>\n\u00bc cup shelled pistachios<br \/>\nInstructions<\/p>\n<p>Poach salmon:<\/p>\n<p>In a medium pot, combine water, lemon slices and pepper; bring to a simmer over medium-high, then reduce heat to a low simmer.<br \/>\nAdd salmon (water should just cover fish), cover, and cook until opaque throughout, 5 to 8 minutes. With a wide, slotted spatula, transfer salmon to a plate.<br \/>\nTo serve:<\/p>\n<p>In a medium bowl, whisk the olive oil, vinegar, cilantro, shallot, cumin, coriander, and salt and pepper. Season more or less to taste.<br \/>\nDivide spinach (or spinach-arugula mix), orange slices, pear slices, red onion, and pistachios among 4 plates.
