This is the healthy and beautiful lunch dish that Lini, my late husband Peter’s mother, has prepared for herself for many of her 90 plus years.
Ingredients
A generous scoop of cottage cheese
1 tablespoon of wheat germ
Dried cranberries softened in boiling water and mixed with peeled almond slivers
Dried apricots softened in boiling water
Dried dates
Fresh fruit: banana slices, orange and grapefruit segments, blueberries, strawberries and raspberries, diced apple and peach.
Directions
Heap the cottage in the middle of the plate and sprinkle with wheat germ. Arrange the fruit aesthetically around the edge.
