Ingredients:
- 2 artichoke hearts
- 1 Tablespoon + 1 teaspoon of lemon juice
- 12 pieces of okra cleaned with the head cut off
- 6 colorful radishes
- 12 snow peas
- 1 bunch of arugula
For the sauce:
- 3 Tablespoons of olive oil
- 3 Tablespoons of lemon juice
- 1/2 of white wine vinegar
- 1/2 clove of crushed garlic
For Serving:
- Soft goat cheese
Directions:
1 For the artichoke:
Boil a pot of water with lemon juice and cook the artichoke hearts for 35 minutes until soft
2 For the okra:
Char the okra in a hot pan until golden.
Add a teaspoon of lemon juice and cut the okra lengthwise
3 For the snow pea:
In a pot with boiling water, soak the snow peas for a few seconds and then immediately transfer to ice water.
4 For the sauce:
Mix all the ingredients together
5 To make the salad:
Mix all the ingredients with the sauce, sprinkle the goat cheese on top and serve.
