In honor of Shavuot we are happy to share a recipe for cheesecake from Leket Israel Project Leket Coordinator, Natali Matarasso.
Ingredients:
- 750 grams/25 oz of gevina levana (white cheese)
- 200 ml/7 ounces of sour cream
- 225 grams/8 oz of cream cheese
- 6 separated eggs at room temperature
- 10 grams/2 teaspoons of vanilla sugar
- 1 cup of sugar
- 4 heaping tablespoons of vanilla/French pudding
- 5 heaping tablespoons of cornstarch
Directions:
- Preheat the oven to 170c/340f
- Whisk the egg whites with 3/4 cup of sugar until firm but not stiff
- In a separate bowl, place the cheeses, sour cream, egg yolks 1/4 cup of the remaining sugar and vanilla sugar and mix well. Add the instant pudding and cornstarch until smooth
- Gently add in the yolks and egg whites foam mixture into the cheese mixture
Line a pan with baking paper and grease the pan and the paper - Put the greased pan inside another pan filled with boiling water. Add the batter into the
- greased pan and bake for 30 minutes at 170c/340f
- Lower the temperature to 150c/300f and continue baking for 30-45 minutes.
- Once it’s ready, turn off the oven and leave in the oven for 3 hours
- Sprinkle with powdered sugar or other toppings
